Through the Options menu (Tools -> Options -> Save) it is possible to set the default save format.

Inside Microsoft Project if you want to save the project in a Oracle or MSSqlServer DBMS, ask for save (File -> Save as), selecting ODBC and specifyng the ODBC entry with the right configuration.
